BUILT WITH INTENT

Dave & Buster's Clarkson didn't start as a rollout. It started on a holiday.

While travelling in the US, David and Linda dropped into a Dave & Buster's without much thought. Just a big night out on holiday. It was loud. It was flashy! It was full of energy! But underneath all of that, something stood out. The room felt like home. Food, drinks, games and sport moving together without fighting for attention. Families, friends, birthdays, teams. All in the same space, all having their own version of a great night.

Dave & Buster's Clarkson didn't start as a rollout. It started on a holiday.

As a family business, NightOwl Entertainment doesn't chase brands casually. So before anything moved forward, David and Linda committed to understanding it properly. What followed were more than twenty trips across four countries, revisiting venues in different cities, at different times, on loud nights and quiet ones. Watching what held up after the novelty faded. Learning what people returned for, and what they quietly ignored.

They weren't trying to copy a global brand. They were trying to interpret it for here.

That work wasn't theoretical. Jamie, (our COO and hospitality legend,) was part of that process throughout, shaping how a global operation actually runs inside the WA market. Australia isn't the US. Getting that scale right mattered.
Food was given the same respect. Jeroen travelled extensively throughout the United States, tasting nearly every version of the Dave & Buster's menu. The strong versions. The inconsistent ones. The forgettable ones. His background spans fine dining and local taverns, and the balance here is deliberate. American classics made with high quality local produce, refined with technique where it improves the dish, and left alone where it doesn't. Familiar food, done with intent.

Gaming was never treated as an add-on. Liam had already helped open Dave & Buster's venues internationally, including time spent in the Philippines setting new locations up from the ground level. That experience shaped how Clarkson was built. Systems were proven before opening. A dedicated arcade technician is on staff at all times. Machines are maintained continuously. When something doesn't feel right, it gets fixed. No guessing. No waiting. Gaming is taken seriously here, because it's supposed to be.

James went further still. He lived in the US for three months to understand what makes Dave & Buster's work when it's done well, and what needed to be re-envisioned for an Australian audience. How nights actually move. When people sit. When they roam. Where energy builds and where it drops. That understanding shaped the flow of the venue, not just the look of it.

Across the entire guest journey, Nik, Harry and Lucy worked directly with global teams across three continents to understand why people love the brand in the first place. Not slogans. Reasons. How a first visit turns into a second. How a casual night becomes a birthday booking years later. How the experience needs to feel consistent from the first click to the twentieth visit. Harry will be part of bringing that thinking to life on camera, sharing the story as it unfolds.

Most of this work isn't obvious when you walk through the doors. But it's why the place feels confident from day one.

Loud, yes. Big, absolutely. But settled. Considered. Ready.

Dave & Buster's didn't arrive in Clarkson by accident. It arrived because this is exactly the kind of place it belongs.
